Cheesy Garlic Bread

This is Granny Pats recipe and EVERYONE loves it.

300ml       Warm water (200-250ml if using Spelt)

1 Tbsp       Dry yeast

2 Tbsp       Olive oil (3 Tbsp if using Spelt)

1 Tbsp       Honey


3 ½ cups White flour (White Spelt)

1 tsp           Salt


25g             Soft butter

2 cloves    Garlic

100g          Cheddar cheese grated

Thyme leaves

Rock salt (optional)


Put warm water, yeast, oil and honey into a jug stir just to make all wet then leave to sit for 5-10mins till frothy.

Sieve flour and salt. Make a well and pour in the wet mixture and mix till all combined. Knead for 5mins (may need a little less work with spelt).

Stretch dough to fit a Swiss Roll tin. (Granny uses Baking Paper….I stick to everything but silicone well oiled).

Mix garlic and butter dotting over the top of the dough. Sprinkle the thyme leaves and the cheese (rock salt).

Granny covers the bread with a lightly oiled cling film and leaves to rise for about 2hours.

I leave mine to rise in the oven no cover (as it collapses if I move or open door)

Oven at about 180-200 for 30mins

Cheese can dribble over edge
